BLACK BEAN SALAD 
1 (15 oz.) can black beans, drained & rinsed
1 sm. green pepper, cut into bite size strips
1 sm. carrot, coarsely shredded
1 tbsp. chopped red onion
2 tbsp. vegetable oil
1/4 tsp. finely shredded lime peel
2 tbsp. lime juice
1/8 tsp. ground cumin
1/8 tsp. ground red pepper
Lettuce leaves (optional)

In a bowl, combine beans, green pepper, carrot and onion. In a screw top jar, combine oil, lime peel and juice, cumin and red pepper. Cover; shake well. Pour over vegetables; toss. Cover and chill. Stir before serving. Serve on lettuce leaves. 4 servings.
