BLACK BEAN SALAD 
1/2 lb. black beans (soaked in water overnight)
1/4 c. sliced red onion
1 c. julienne green peppers
1/4 c. whole canned corn

Cook pre-soaked beans approximately 3 hours. Mix with all other ingredients. Add dressing.

Dressing:

1/2 c. cider vinegar
1/3 c. brown sugar
1/4 c. water

Serve alone or as a topping over lettuce.
