CHOCOLATE MOUSSE 
4 eggs
9 oz. semi-sweet chocolate chips
3 tbsp. rum
1/8 tsp. cream of tartar
1 pt. heavy cream
1 tsp. vanilla

Melt chocolate chips over hot water. Beat 4 egg yolks and rum in. Beat egg whites and cream of tartar in separate bowl until stiff peaks form.

In another bowl beat heavy cream and vanilla until stiff. Fold egg whites into heavy cream and then fold melted chocolate in. Refrigerate several hours and serve with whipped cream. Can be frozen.

To make mocha chocolate mousse, stir in 1 tablespoon instant espresso coffee into chocolate mixture.
