TURKEY OR CHICKEN CROQUETTES 
4 tbsp. butter
5 tbsp. flour
1 c. milk
1/2 c. finely chopped or ground turkey or chicken
1 tsp. onion, grated
1 tbsp. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper
1 egg
1 tbsp. water
Dry bread crumbs or cracker meal

Make a thick cream sauce with butter, flour, milk and stock. Cool. Add turkey or chicken, onion, parsley, salt and pepper. Shape as desired. Beat egg and add water. Dip croquettes in egg and roll in crumbs. Set aside in refrigerator for 1 hour or longer. Fry in deep fat until a delicate brown. Drain on absorbent paper. Serve hot. May be served with a hot mushroom sauce.
