RABBIT SUPREME CASSEROLE ALIAS
CHICKEN SUPREME CASSEROLE
 
1 rabbit (or med. chicken)
1 stalk of celery, chopped
3/4 stick of butter
1 can consomme
1 lg. onion, chopped
1/8 c. of parsley, chopped
1 can mushroom soup
1 c. rice

Boil rabbit for 1 hour (chicken a little less). Debone and cut up in small pieces. Brown meat in skillet of butter. Remove, saute onion and celery in drippings for 10 minutes.

Add soups, parsley, rice and meat. Mix together and then pour into a 2 quart greased casserole dish. Cover with foil. Bake for 45 minutes at 350 degrees.

Serves 6.
