GREEN PEA SOUP 
8 oz. dried green peas
1/4 c. salted pork back fat
7 c. water
1 onion, finely sliced
Salt and pepper
1 carrot, diced
Bay leaf
2 tsp. celery leaves, finely sliced
5 parsley sprigs
1/2 tsp. chopped savory

In a stove top casserole dish, combine all ingredients and bring to a boil. Boil for 2 minutes; reduce heat. Cover and simmer for about 1 1/2 hours, stirring from time to time. Remove pork fat; run soup through blender and adjust seasoning. Decorate with a few small chunks of pork fat and serve.
