1 (14 oz.) can sweetened condensed milk
1-2 tsp. grated lemon peel
1 3/4 c. Bisquick baking mix
1 c. packed brown sugar
1/2 c. lemon juice (2-3 lemons)
1 1/2 c. quick cooking oats
1/4 c. butter, softened

Heat oven to 375 degrees. Grease rectangular pan, 13"x9"x2". Mix milk, lemon peel and lemon juice in bowl until thickened; reserve. Mix remaining ingredients until crumbly. Press half of the crumbly mixture in pan. Spread with milk mixture. Sprinkle remaining crumbly mixture on top, pressing lightly. Bake until light brown, 25 to 30 minutes; cool. Cut into about 2" squares. 2 dozen cookies.
