PACIFIC SALMON WITH ROASTED
GARLIC
 
4 (6 oz.) salmon fillets
1 medium head garlic
1/4 c. olive oil
1 1/2 tbsp. butter
1 fresh lemon
fresh rosemary, chopped

Separate garlic into cloves and peel. Place in small ramekin and cover with olive oil. Wrap with foil.

Bake at 400°F for 30 minutes. Place garlic and 1 tablespoon of oil from baked garlic in food processor. Add butter and puree; season with salt and fresh ground pepper.

Place salmon on baking sheet. Drizzle juice from lemon over the fillets. Season with salt and pepper. Spread each fillet with 1/4 tablespoon of garlic puree.

Bake at 450°F for 15 minutes. Garnish with fresh rosemary.
