TEXAS RANCH-HOUSE BEANS | |
4 c. dried pinto beans 8 c. water 1/2 lb. salt pork 2-4 tbsp. chili powder, depending on taste 1/4 to 1/2 tsp. hot pepper sauce, depending on taste Salt to taste Bring beans and water to a boil. Remove from heat, cover and let stand for 1 hour. Add salt pork and simmer covered, for 1 1/2 to 2 hours, or until beans are tender and water is almost absorbed. While beans are cooking, remove scum from top and stir occasionally. Remove salt pork and stir in enough chili powder, hot pepper sauce, and salt to give beans a spicy flavor. Beans can be prepared ahead of time and reheated. Makes 10-12 servings. |
