WHOLE WHEAT BANANA BREAD | |
1 1/4 c. all-purpose flour 1/2 c. whole wheat flour 1 tsp. baking soda 1/4 tsp. salt 1/2 c. sugar 1/4 c. Puritan oil 1 egg 1 c. mashed ripe banana (about 2 med.) 1 tsp. vanilla extract Vegetable cooking spray 1. Combine first 4 ingredients in a small bowl; stir well and set aside. 2. Combine sugar and Puritan oil in a medium mixing bowl; beat at medium speed of an electric mixer 2 minutes or until well blended. Add egg; beat until light and lemon colored. 3. With mixer running at low speed, add flour mixture alternately with banana, beginning and ending with flour mixture. Blend well after each addition. Stir in vanilla. 4. Pour batter into an 8x4x2 inch loaf pan coated with cooking spray; bake at 350 degrees F. for 45 minutes or until a wooden pick inserted in center comes out clean. Cool 16 minutes in pan on a wire rack; remove from pan, and let cool completely on a wire rack. Yield: 1 6 servings (about 120 calories per 1/2 inch slice.) |
