STRAWBERRY-WALNUT BREAD 
1 pt. strawberries
1 c. sugar
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
3 eggs
1/3 c. cooking oil
1 tsp. vanilla
1 c. chopped walnuts

Hull strawberries and cut into 1/2 inch pieces; sprinkle with half of sugar. Set aside. Combine next 4 ingredients; set aside. Beat eggs with remaining 1/2 cup sugar. Stir in oil and vanilla. Add flour mix and walnuts. Add strawberries and the juice they have made. Stir only until combined. Pour in greased and floured loaf pan and bake at 350 degrees for 45 minutes.

HINTS: Make sure you cut the strawberries small enough or you will have holes in your bread. Do not use frozen strawberries. Pecans are a nice substitute for walnuts.
