FRUITED PORK CHOPS | |
8 pork chops 1 packet dried onion soup mix 1 tsp. thyme 2 tbsp. lemon juice 1 1/2 uncooked regular white rice 11 oz. can mandarin oranges, drained 3/4 c. pitted prunes Brown pork chops. Combine rice and soup mix in a 9x13 baking pan. Arrange pork chops on rice and sprinkle with lemon juice and thyme. Add 2 cups water to pan drippings and pour over rice. Cover and bake covered at 350 degrees for 30 minutes. Add prunes (and mandarin orange juice if needed for moisture) and bake 30 minutes longer. Add mandarin oranges about 5 minutes before serving. Serves 6-8. |
