ROASTED MINT CHICKEN 
1/2 c. chopped fresh mint, divided
2 tsp. grated lemon peel
1 tsp. minced garlic
1 (3 1/2 lb.) chicken, quartered
1/4 tsp. salt
1/8 tsp. freshly ground pepper
3 tbsp. fresh lemon juice
1 tbsp. olive oil

Preheat oven to 450 degrees. Combine 1/4 cup of mint with the lemon peel and garlic in a cup. Spread under skin of each piece of chicken. Sprinkle chicken lightly with salt and pepper. Stir remaining 1/4 cup of mint with the lemon juice and oil in small bowl.

Arrange chicken, skin side up, in shallow roasting pan. Brush with 1/2 the lemon juice mixture. Bake 15 minutes. Brush with remaining lemon juice, bake 15 minutes more. Makes 4 servings. Preparation time: 10 minutes. Cooking time: 30 minutes.
