SOY SAUCE SPICED BEEF 
1 lb. boneless stewing beef
2 tbsp. peanut oil
2 tbsp. dry sherry
3 tbsp. soy sauce
1 tsp. sugar
2 scallions
5 drops anise extract

Preparation: Wash beef and cut into 1 inch cubes. Wash scallions. Cut into 2 inch pieces. Use both green and white parts.

Cooking: Heat 2 tablespoons oil in saucepan over high heat. Add beef cubes, brown well. Add 2 tablespoons dry sherry, 3 tablespoons soy sauce and 1 teaspoon sugar. Mix well and cook 3 minutes. Stir in scallions, add 1 cup cold water. Bring to boil. Reduce heat to medium, cover and cook for 20 minutes, stirring occasionally. Add anise; cook on low 30 minutes more. Serve over cooked Minute Rice.
