ROXANNE'S SPAGHETTI PIE | |
6 oz. spaghetti 2 eggs, beaten 1/4 c. grated Parmesan cheese 2 tbsp. butter 1/2 c. chopped green pepper 4 oz. mozzarella cheese, cut in strips 1/3 c. chopped onion 1 c. dairy sour cream 1 lb. Italian sausage 1 can tomato paste (6 oz.) 1 c. water Break spaghetti in half and cook according to package directions; drain. While still warm, combine spaghetti with eggs and Parmesan cheese. Put spaghetti in well greased 10 inch pie plate. With back of spoon, press it up around sides of plate to form "crust". Melt butter. Add green pepper and onion. Saute until onion is transparent. Add sour cream. Spoon mixture over spaghetti. Remove sausage from casing. Crumble sausage into skillet. Cook until done. Drain off grease, add tomato paste and water to sausage mixing well. Simmer 10 minutes. Spoon sausage mixture over sour cream. Bake in preheated oven (350 degrees) for 25 minutes. Arrange mozzarella strips, spoke fashion, on top of pie. Return to oven just long enough to melt cheese. Serves 6. |
