POUND CAKE 
2 1/4 c. whole wheat flour
1/2 tsp. baking soda
2/3 c. honey
1 tsp. vanilla
3/4 c. buttermilk
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter
2 eggs

Sift flour, baking soda and salt. Cream honey and butter; add vanilla. Separate eggs; whip egg whites until stiff. Beat yolks and add to the honey and butter; add sifted ingredients to this mixture, a third at a time alternating with buttermilk. Fold in egg whites and turn into a 4 x 8-inch pan.

Bake at 350 degrees for 1 hour.
