FRUIT PIZZA | |
1/2 c. 1% milkfat cottage cheese, small curd 1/4 c. butter 1 c. whole wheat flour 1/2 c. quick-cooking rolled oats 1 tsp. grated lemon peel 1 (1.1 oz.) pkg. sugar free instant vanilla pudding 2 c. skim milk 1 banana, sliced 1 (8 oz.) can pineapple slices, drained 1 (16 oz.) can tart cherries, drained 1 can peach slices, drained 1/2 c. reduced calorie strawberry jam Lite whipped topping (optional) In a small bowl, combine cottage cheese and butter until smooth. In a large bowl or food processor, combine flour, oats, lemon peel and salt. Add cottage cheese mixture to dry mixture and blend well. Press evenly into a greased 12-inch pizza pan, forming a 1/2 inch rim. Bake at 400 degrees for 15-20 minutes. Cool. Prepare pudding mix according to package directions, using the 2 cups skim milk and chill. Spread pudding in prepared crust. Arrange fruit on top of pudding. Heat jam until melted. Drizzle over fruit and chill. Serve with lite whipped topping, if desired. Yields: 16 servings. 182 calories each. |
