CHEESE SOUFFLE 
Sauce:

2 1/2 tbsp. butter
3 tbsp. flour
3/4 c. hot milk
pinch of salt
pinch of nutmeg
1/8 tsp. of pepper

Egg Mix:

3 eggs
3 extra egg whites
pinch of salt
1/4 tsp. cream of tartar
1 cup grated cheese (any type)

Sauce

Melt butter in sauce pan. After butter has melted, remove from heat; add warm milk, then boil, stirring constantly for 30 seconds. Remove from heat. Beat in salt, pepper and, nutmeg stir and add cheese.

Egg Mix:

Beat egg whites add cream of tartar and stir in egg whites mix both the sauce and the egg mix and pour in to buttered souffle dish.

Heat oven to 350°F for 20-25 minutes or until souffle has risen half an inch over the top of the dish.
