VANILLA CRUMB DESSERT | |
Vanilla wafers 1 1/2 c. confectioners' sugar 1/4 c. butter 2 well beaten eggs 1 lg. can crushed pineapple, drained 1/2 pt. heavy cream 1/2 c. finely chopped pecans Crush enough vanilla wafers to line a 8 x 8 inch Pyrex dish with 1/4 to 1/2 inch cookie crumbs. Crush an additional 3/4 cup crumbs and reserve for later. Cream butter with the confectioners' sugar. Stir in the beaten eggs. Spread butter mix over crumbs in Pyrex dish, be careful not to disturb the crumbs. Spread drained crushed pineapple over the butter mix. Beat the heavy cream to spreading consistency, stir in the pecans. Spread the cream mix over the pineapple. Cover the cream mix with a thin coating of the reserved vanilla wafer crumbs. Chill 10 hours or overnight. Makes 16 (2 x 2 inch) servings. |
