MUSHROOM BURGERS | |
2 onions, chopped 3/4 lb. mushrooms, chopped 3 cloves garlic, crushed 2 lbs. tofu 3 c. rolled oats 1 (10 oz.) pkg. frozen, chopped spinach, thawed and pressed 2 tbsp. low sodium soy sauce 4 tbsp. vegetarian Worcestershire sauce 1/2 tsp. black pepper 1 tsp. paprika 1 tsp. lemon juice Whole wheat buns and any garnish you wish Saute onions, mushrooms, and garlic in a small amount of water until they are softened and water is absorbed. Mash tofu in a large bowl. Add oats, spinach (make sure all excess water is removed), seasonings and lemon juice. Mix well. Stir in onion-mushroom mixture. Shape into patties and place on non-stick cookie sheet. Bake at 350 degrees for 20 minutes; turn over, then cook an additional 10 minutes. Makes 15 to 18 medium size burgers. |
