CHOCOLATE PEANUT BUTTER COOKIES 
1 2/3 c. (10 oz. pkg.) peanut butter chips
1/2 c. butter
1/2 c. light brown sugar
1 egg
1 tsp. vanilla extract
1 1/2 c. all-purpose flour
1/2 c. unsweetened cocoa
1/2 tsp. baking soda
Additional granulated sugar

Heat oven to 375 degrees. In small microwave bowl melt 1/2 cup peanut butter chips 1 1/2 seconds or just until smooth when stirred.

In a large mixing bowl beat butter, brown sugar, granulated sugar, egg and vanilla until light. Add melted peanut butter chips. Beat together flour, cocoa and baking soda. Stir butter mixture until blended.

Shape 1 tablespoon of dough into ball, roll in granulated sugar. Place balls on ungreased sheet with bottom of glass flatten cookie. Using thumb make indentation in each cookie. Bake 6-8 minutes. Put teaspoonful of peanut chips in the middle of each cookie. After melted spread in the middle. Makes about 2 1/2 dozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
