MEXICAN CASSEROLE 
10 oz. cooked ground turkey or beef
1/2 c. chopped green peppers
1 med. onion, chopped
2 c. canned tomatoes
Salt and pepper to taste
8 oz. nacho cheese
1 tsp. chopped garlic
1 pkg. taco season mix
2 c. rice

Brown meat. Add onions, peppers. Simmer 5 more minutes. Add tomatoes, taco mix, salt and pepper. Simmer until liquid is gone. Stir in rice. Add cheese saving some for the top.

Pour into casserole dish and top with cheese. Bake at 350 degrees for 10-15 minutes.
