SWEET POTATO ROLL 
1 c. sweet potatoes
2 eggs
1/2 c. oil
1/3 c. water
1 2/3 c. self-rising flour
1 1/2 tsp. cinnamon
1 1/2 c. sugar
1/2 c. nuts

Cook sweet potatoes and mash. Add all the ingredients. Bake in a jelly roll pan for 35 minutes at 325 degrees. Put cake on a towel sprinkled with powdered sugar. Roll up and let cool.

FILLING:

1 (8 oz.) cream cheese
1 c. powdered sugar
1/2 stick butter
1/2 tsp. vanilla flavoring

Instead of vanilla flavoring you can use 1/4 teaspoon butternut flavoring and 1/2 teaspoon vanilla flavoring.

Mix all ingredients. Spread on cooled cake and roll up.
