HOLIDAY MINTS 
1 (3 oz.) pkg. cream cheese, room temp.
2 1/3 c. sifted confectioners' sugar
Few drops peppermint extract
Red or green food coloring
1/3 c. (approx.) sugar

Put cream cheese, confectioners' sugar, peppermint extract and 2 drops food coloring in a large mixing bowl. Squeeze with hands until mixture is smooth and well-blended. Taste mixture. Add more peppermint extract if you want a stronger mint flavor. Add more food color if you want a deeper color.

Put 1/3 cup sugar in a saucer. Roll candy mixture into balls about the size of marbles. Roll sugar-coated candy balls on a plate and press each flat with the bottom of a glass or with fingers. Place mints on a cookie rack for about an hour to set.
