SCALLOP SCAMPI | |
1 1/2 lb. bay scallops 6 tbsp. butter 1 clove garlic, crushed 2 tbsp. lemon juice 2 tbsp. parsley 2 tbsp. seasoned bread crumbs Paprika Rinse scallops and pat dry; set aside. In skillet heat 3 tablespoons butter. Add garlic. Heat until brown, 2 minutes. Stir in lemon juice. Then add scallops. Cook 3-4 minutes. Stir until scallops are creamy white. Drain off liquid. Place scallops in baking dish; toss with parsley and sprinkle with bread crumbs. Add paprika. Drizzle with remaining butter. Broil 2 minutes or until golden brown. Good with rice! |
