SPINACH LASAGNA 
Italian Sauce
12 lasagna noodles, 1/2 cooked, drained & rinsed (Can sub. zucchini or eggplant for noodles)
2 c. ricotta or cottage cheese plus 2 beaten eggs
Salt & pepper
1/2 lb. raw, chopped spinach plus dash of nutmeg
2 tbsp. wheat germ
1 lb. shredded mozzarella cheese
1/2 c. grated cheese

Spread some sauce in pan, 1/3 noodles, 1/2 filling, sauce, 1/2 mozzarella, 1/3 more noodles, rest of filling, sauce, rest of mozzarella, rest of noodles, sauce, grated cheese. Bake 45 minutes covered at 375 degrees. Uncover last 10 minutes. Let stand 10 minutes.
