CINNAMON GLAZED APPLES
2 (3 oz. each) pkgs. strawberry-banana gelatin
1 c. water and 1 c. apple juice
1 cinnamon stick about 2 inch long, or use 1/4 tsp. ground cinnamon
3 lemon sliced, 1/4 inch thick
6 med. size baking apples, peeled and cored

Combine gelatin, water, apple juice, cinnamon and lemon slices in a medium size skillet. Bring to a boil, stirring until the gelatin is dissolved. Add apples, cover and simmer 15 minutes, or until just tender, turning over and basting occasionally. Remove from heat. Remove cinnamon stick and lemon slices.

Place apples in custard cups or serving dishes and top with syrup. Chill until set, about 1 hour. Serve with whipped topping if desired, for a dessert; or for a salad, with a cream cheese dressing. (If a large electric skillet is used, twelve small apples may be glazed).
