FAY'S BLUEBERRY LEMON MUFFINS 
2 eggs
1 c. sugar
2 c. flour
1/2 tsp. baking soda
1 c. blueberries or tbsp. poppy seeds
1/2 c. butter
1 (8 oz.) plain yogurt
1 tsp. baking powder
1 tsp. grated lemon rind

Beat eggs, butter and sugar. Stir in yogurt, add dry ingredients. Fold in blueberries or poppy seed.

Bake 25 minutes in preheated oven at 375 degrees. Makes 12 muffins.
