RUTH'S RATATOUILLE 
2 or 3 sm. slices zucchini
Olive oil
1 sliced onion
Sliced mushrooms
1 sliced pepper (opt.)
Fresh peeled tomatoes or 1 sm. can stewed tomatoes
Few chopped olives (opt.)
Basil, garlic salt to taste

Brown zucchini in olive oil. Remove with slotted spoon. In the same pan saute onion, mushrooms and pepper. Add zucchini and remaining ingredients. Simmer slowly until well blended. Can be turned into a shallow baking dish and topped with cheddar or Parmesan cheese and bake. Better the second day.
