ENCHILADAS | |
2 lbs. hamburger 2 cans enchilada sauce (mild or hot) 2 cans pitted ripe olives 1 pkg. corn tortillas Colby cheese Oil Brown hamburger. Remove fat. Slice olives. Grate cheese. Put oil in fry pan and heat. Dip tortillas in oil until soft. Dip in enchilada sauce. Place in large cake pan. Fill with hamburger, olives and cheese. Fold in half. When filling tortillas is complete, pour remaining sauce over top of enchiladas and sprinkle cheese over sauce. The amount of cheese used is personal preference. Bake at 350 degrees until cheese is melted, approximately 10-15 minutes. Serves 6. |
