CHEESECAKE TORTES 
2 (8 oz.) pkgs. cream cheese (softened)
3/4 c. sugar
2 eggs
2 tbsp. lemon juice
1 tsp. vanilla
18-20 vanilla wafers
1 can cherry pie filling (or others)

Beat first 5 ingredients together until light and fluffy (about 5 minutes). Line muffin tins with paper cupcake liners. Put a vanilla wafer (upside down) in the bottom of each. Fill 1/2 (or a bit more) with cheesecake mixture. Bake at 375 degrees 12-15 minutes or until just set. (Do not overbake.) Cool and top with the cherry pie filling. Serves 18-20.
