SPINACH QUICHE 
1 c. milk
8 oz. grated Swiss cheese
Dash of nutmeg
2 tbsp. flour or cornmeal
10 oz. spinach, cooked and drained
3 eggs
Dash of salt
9 inch pie shell, raw

Set oven at 425 degrees. Toss cheese and flour. Mix all ingredients. Pour into pie shell. Bake on bottom rack for 10 minutes. Move to middle of oven and turn oven to 325 degrees. Bake for 30 to 35 minutes more. Cool for 20 minutes. Serve.
