BASIC PIE DOUGH 
3 c. all-purpose flour
1/4 tsp. salt
4 oz. shortening
3 oz. batter
5 tbsp. very cold water

Place flour, salt, shortening and butter in large bowl. Mix together with pastry blender until texture resembles oatmeal. Add water and knead dough until well incorporated. If dough is too stiff add more water.

Form dough into ball, wrap in cloth and refrigerate 2 hours. Bring dough to room temperature before using. Flour cutting board or table and cut dough in two. Roll out dough and flour as needed. Turn dough over and roll out other side. Line pie plate and trim edges. (Enough for 2 pies.)
