ROAST DUCK 
1 (3 1/2 - 4 lb.) Long Island duckling
Paprika
Black pepper
Garlic salt
Applesauce
Cinnamon

Use shallow pan with rack. Line pan with foil and spray with non-stick vegetable spray. Clean duck well. Sprinkle with salt, pepper, paprika and garlic salt; place in 325 degree oven. Bake about 3 to 4 hours. Touch skin to check crispness. Duck is not done until brown and crisp. Serve with applesauce sprinkled with cinnamon. When serving duck, cut into quarters with poultry shears; allow one quarter per person. This duck goes well with wild rice or any fancy rice. Serves 4.
