CHOCOLATE ZUCCHINI BREAD | |
2 c. flour 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 3 eggs, beaten 1 c. oil 2 c. sugar 1 tsp. vanilla 3 sq. unsweetened baking chocolate, melted 1 c. chopped nuts 2 c. grated zucchini, packed Sift flour with dry ingredients. Add eggs, oil, sugar, vanilla and chocolate to flour mixture and mix well. Fold in nuts and zucchini. Use 2 regular sized loaf pans or 5 small ones. Bake at 350 for 45 minutes for small pans or 55 minutes for large pans. (Spray pans with a small amount of PAM first.) Leave in pans a few minutes before removing. (co-worker of Lynne Cross) |
