WINTER CARROT CASSEROLE 
1 1/2 lb. carrots (4 1/2 c.)
1/2 c. mayonnaise or salad dressing
2 tbsp. chopped onion
2 tbsp. horseradish
1/4 tsp. salt
Dash of pepper

Mix together. Melt 2 teaspoons butter and brown 1/4 cup crushed crackers in it. Put on top of carrot mixture and bake at 350 degrees for 30 minutes, uncovered.
