30 lbs. beef & pork
8 tbsp. sausage seasoning
8 tbsp. brown sugar
1 box mustard seed
1/2 c. Tender Quick (salt)
1/2 tsp. garlic salt
3 c. boiled meat juice

Don't put too much pork in if too fatty. Mix well and stuff casings ready for smoking.
