FEATHER LIGHT RICOTTA PANCAKES 
1/2 lb. Ricotta cheese
3 eggs, separated
1 tsp. baking powder
1/2 c. flour
2/3 c. milk
Pinch of salt

Whip egg whites until they will hold a peak. Beat egg yolks. Combine all the otehr ingredients thoroughly with egg yolks. Mix well. Fold in whites. Bake on hot griddle.

NOTE: These bake very quickly and must be watched carefully.
