NEW POTATOES AND BEANS 
1 lb. new potatoes, sliced 1/4 inch slices
1/4 c. julienne green pepper (1 1/2 x 1/4 inch strips)
1/4 c. julienne red pepper (1 1/2 x 1/4 inch strips
1/4 c. chopped onion
2 tbsp. snipped fresh parsley
2 tbsp. defatted chicken broth
1 lg. clove garlic, minced
1/4 tsp. dried rosemary leaves, crushed
1 (16 oz.) can Great Northern beans or kidney beans, rinsed and drained

In 2 quart casserole, combine all ingredients, except beans. Cover. Microwave at high for 10 to 14 minutes or until potatoes are tender, stirring once. Add beans; mix well. Microwave at high for 1 1/2 to 2 minutes or until beans are hot. 8 servings.

Per serving: 107 calories; 4 g protein; 19 g carbohydrates, 2 g fat, 4 mg. sodium, 3 g fiber.

Since microwave ovens vary in power, you may need to adjust your cooking time.
