JEWISH APPLE CAKE | |
4-5 lg. apples 1/2 c. sugar 1 tsp. cinnamon (to taste) 4 eggs 2 c. sugar 3 c. sifted flour 3 tsp. baking powder Pinch of salt 1/2 c. orange juice 2 1/2 tsp. vanilla 1 c. oil Peel, core and slice apples. Dust with a mixture of sugar and cinnamon. Grease and flour a 9 inch tube pan. Cream eggs with sugar. Add flour, baking powder and salt that has been sifted together. Beat in orange juice, oil and vanilla. Beat until smooth. Pour half the batter into the pan. Top with half the apple slices. Pour remaining batter over this plus remaining apples, topping with leftover cinnamon and sugar, if any. Bake at 350 degrees for 1 - 1 1/2 hours or until done. Cool 10 minutes. |
