HUEVOS RANCHEROS 
1 pt. corn oil
8 (7 inch) corn tortillas
8 eggs, fried sunny side up
1 c. tomato sauce
1/2 c. sour cream
1 avocado, peeled and sliced

Heat oil in skillet on medium heat. Add tortillas, one at a time. Fry 30 seconds each side. Top each tortilla with 1 egg, 2 tablespoons tomato sauce and 1 tablespoon sour cream. Garnish with avocados. Makes 8 servings.
