BLUEBERRY BREAD PUDDING 
Preparation time: 5 minutes. Baking time: about 1 hour. Oven temperature: 350 degrees. Serves: 4.

1 1/2 c. buttermilk
2 eggs
1/4 c. granulated sugar
1/2 tsp. vanilla extract
2 slices white bread
1 c. unsweetened blueberries, fresh or frozen

1. Combine all ingredients except blueberries, in blender or food processor. Blend thoroughly.

2. Pour into a medium size baking dish.

3. Add blueberries. Stir to distribute them evenly.

4. Bake at 350 degrees for about 1 hour or until browned on top.

Good served with: Ice cream or whipped cream.

MICROWAVE TIPS: Combine all ingredients in a microwave-safe casserole. Cover. Vent. Microwave on Medium-High (70%) power for 15 minutes, stirring once. Microwave on High (100%) power for another 10 to 15 minutes until set.

TIPS: When you need to your use oven, save energy by utilizing it as fully as possible. This pudding is easy to assemble and bakes alongside something else requiring the same oven temperature.

Since microwave ovens vary in power, you may need to adjust your cooking time.
