OVEN BARBECUED BRISKET 
4-5 lb. brisket of beef
3 med. carrots, sliced lengthwise
3/4 c. tomato puree
1 tsp. Worcestershire sauce
1 tsp. vinegar
1 tbsp. brown sugar
2 tbsp. vegetable oil
1/2 tsp. thyme
1/2 tsp. dry msutard
Salt & pepper
2-3 dashes cayenne

Heat oven to 350 degrees. Place brisket on piece of heavy aluminum foil large enough to completely package beef for baking. Combine remaining ingredients (except carrots). in saucepan and bring to a boil. Sprinkle brisket with salt and pepper, then place carrots on top of meat. Pour sauce over beef and seal edges of foil as though it were an envelope, pinch edges carefully. Place on baking sheet and bake for 2 1/2 to 3 hours or until meat is fork tender. Serves 6.
