BRAISED CARAWAY PORK CHOPS | |
4 center-cut pork loin chops (6 oz. each) 1 tbsp. plus 1 tsp. butter 1 c. each chopped onions and sliced mushrooms 1/2 tsp. each caraway seed and salt 1/4 tsp. pepper 1 1/2 c. water 1 tbsp. plus 1 tsp. chopped fresh parsley On rack in broiler pan broil chops, turning once, until rare. In 12-inch skillet heat butter until bubbly and hot; add onions and saute until softened. Add pork chops, mushrooms, caraway seed, salt, and pepper and cook for 5 minutes; add water, cover, and let simmer until meat is tender, about 45 minutes. Serve sprinkled with parsley. |
