MEXICAN CORN BREAD 
1 c. and 1 tbsp. yellow corn meal
3/4 tsp. salt
1/2 tsp. baking soda
3 tbsp. sugar
1 c. milk
2 eggs
1/2 lb. Cheddar cheese, grated
1 lg. onion, chopped
4 jalapeno peppers, seeds out
Sm. jar of chopped pimento
2 lb. browned hamburger

Grease bottom of Pyrex dish. Sprinkle 1 tablespoon of meal in dish. Mix meal, salt, soda, sugar, milk and eggs. Pour 1/2 of batter in dish. Place meat, onion, cheese, 3/4 of peppers and all of pimento on top of batter.

Place remaining peppers on top of meat mixture. Pour remaining batter atop and bake at 350 degrees for 50 minutes.
