BROCCOLI CORN BREAD 
1 (10 oz.) pkg. frozen broccoli
1 chopped onion
1/2 c. butter
4 eggs, beaten
1 c. cottage cheese
1 tsp. salt
1 (8 oz.) pkg. Jiffy corn muffin mix
1/2 c. Cheddar cheese (optional)

Lightly cook and drain broccoli. Sauté onion in butter until transparent. Combine broccoli, onion, eggs, cottage cheese, salt, corn bread mix and cheese. Pour into lightly greased 8-inch square pan.

Bake at 375°F for 50 minutes or until golden brown. Cut into squares.
