BEEF CURRY | |
2 lb. beef, well trimmed and cut in small pieces Oil Flour Salt Pepper 2 apples 1 tomato 1 green pepper 1 clove garlic 1 lg. onion 2 tsp. curry powder 3/4 c. water 1 beef bouillon cube Dredge meat in flour, salt, pepper mixture. Brown meat on all sides. Remove from heat. Finely chop apples, tomato, pepper, garlic and onion. Add to oil and saute a few minutes until golden and soft. Add curry powder, water, beef bouillon cube. Stir. Return meat. Cook over low heat 1 hour or longer. Serve over rice in center of dinner plate. Pass a variety of condiments. The more condiments, the more different taste treats and the more fun! SUGGESTED CONDIMENTS: Chopped hard cooked egg, chopped tomato, salted peanuts, salted almonds, coconut, pineapple bits, chutney, sweet and sour pickles, chopped avocado, sliced banana, raisins, snipped parsley, sauteed onion rings, crisp bacon bits, current jelly. Choose at least 6. |
