GLAZED PECANS 
3 c. pecan halves
1 c. sugar
1/2 c. water
1/2 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. rum flavoring

Spread pecans in a 15"x10"x1" jelly roll pan. Bake at 250 degrees for 15 minutes. Set aside. Combine sugar and next 4 ingredients in a small saucepan; stir until sugar dissolves. Cook, without stirring, until syrup reaches soft ball stage, 234 degrees. Add rum flavoring and pecans. Stir until pecans are coated, pour onto waxed paper, separating pecans as they cool.
