ZUCCHINI BREAD | |
3 c. zucchini, shredded with skins on 3 eggs 1 tsp. vanilla 1 c. vegetable oil 3 c. flour 2 c. sugar 1 tsp. baking soda 1/4 tsp. baking powder 1/4 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. ginger 1 tsp. cloves In large mixing bowl, mix first 4 ingredients, blending well. In separate bowl, mix together dry ingredients. Add to first bowl, mixing well. Pour into well greased and floured bread pans, about 1/2 full. Bake for 1 hour at 375 degrees. Test for doneness with toothpick test. Let cool for 10 minutes before removing from pans, then let cool on racks. Yields 3 loaves. Raisins or chopped walnuts may be added to mixture if desired. |
