SOFT GINGERBREAD COOKIES 
1/2 c. softened butter
1/2 c. brown sugar
1 egg, beaten
3/8 c. molasses
3/8 c. sour milk
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. ginger
1/2 tsp. salt

Cream together butter, brown sugar, egg, molasses and sour milk. Sift together flour, baking soda, ginger and salt. Add to batter and mix well (makes a very soft batter). Chill for 1 hour. Roll 1/4" thick (only remove a little of batter from refrigerator, must be firm to be able to work with). Cut out with cutter and bake at 350°F until done. Will be soft. Frost when cool.
